Made with 100% organic Sauvignon Blanc grapes, harvested in March, it’s whole berry pressed and inoculated with specific yeast to retain its characteristic flavors. After three months on lees for texture, it’s lightly filtered and bottled. With a steely green color and aromas of grapefruit and pear, the palate offers lively citrus flavors and balanced acidity.
