The fun finale in the Incubator Series, this is our very first Pet Nat, blending organic Riesling and Chardonnay harvested in early March. Fermented naturally in stainless steel, it’s stopped at the perfect balance of sugar and acid, with around 10g/L residual sugar. Bottled under crown seal for continued fermentation, it offers bright lemon blossom aromas and zippy lemon acidity on the palate, with a lively cloudy texture. Best served chilled as an aperitif.
