2022 See Saw Invergo Syrah

Summary: The first release of our INVERGO series showcases innovative techniques. Harvested from Annangrove Park vineyard on March 28th, 2022, this organic Syrah undergoes a 3-day cold soak before whole berry fermentation in open top fermenters. After 14 days on skins for balanced tannin extraction, it matures in French oak puncheons (30% new) for 8 months. Lightly filtered and bottled in late November 2022, it presents a bright purple hue with aromas of dark plum, black olive, white pepper, and florals. On the palate, the cool growing season yields classic blue fruit and spice flavors, balanced by fine tannins.
