The INVERGO range highlights innovative techniques and intriguing varieties. This organic Riesling, sourced from Annangrove Park vineyard, was harvested in the early morning on March 15th. Only free-run juice was used, clarified, and fermented long and cool to preserve delicate aromatics. Left on fine lees for 3 months before bottling on July 19th, it presents a pale straw color with aromas of delicate white florals, Bickford’s lime cordial, and lemon blossom. The palate offers zippy acidity, with grapefruit pith, florals, and a hint of aniseed, providing length and tension. Enjoy the unique character of this wine.
