Tasting Notes

Aroma: Intensely floral with daphne, jasmine, citrus blossom and honeysuckle.

Appearance: Pale straw to light gold.

Taste: Burst of floral front palate sweetness supported by refreshing acidity and an assertive spritz.

 

Winemaker Notes

Harvested at 12-Beaume to achieve a fine balance of sweetness, alcohol, acidity, and generous fruit
flavours. The fruit is then crushed and allowed to soak for three hours to help maximise flavour extraction
before being drained off, then left to settle to clarify partially fermented cool in stainless steel, then arrested
60% through with a residual sugar of around 80g/L. The wine is clarified and bottled young with a deliberate
‘frizzante’ to enhance its palate and drinking style.
