The INVERGO range highlights the most intriguing varieties and innovative techniques of the season. Harvested from the Balmoral vineyard on March 6th, 2021, this organic Chardonnay undergoes whole berry pressing and fermentation in French Oak. After maturing for 8 months with fortnightly lees stirring for complexity, it’s lightly filtered and bottled in December 2021. Presenting a pale lemon color, it offers aromas of grapefruit, white nectarine, and a hint of toast, while the palate features flavors of lemon curd, green apple, and creamy vanilla. With an alcohol content of 12.1% alc vol, it’s also vegan-friendly.
